Tsuchiya

“Okashi tsuchiya” which holds the head office in Ogaki is selling various kinds of Japanese and Western cakes corresponding to the season, including the Gifu Confection “Kaki Yokan”.

While preserving the taste of old as a long-established store, the predecessor’s attitude to constantly pursuing newness has been steadily inherited even now more than 260 years have passed since its founding.

Founded in 1755. Setting up the head office is a quiet street a little away from the station, south of Ogaki castle.  Built in the Meiji era, it has a heavy feeling.

 

It is registered as a landscape heritage of Ogaki-city.

“Tsuchiya family seems to like new things for a long time. The shop front sign made in Meiji era also contains alphabets. Yuya Murutani of the ninth generation speaks.

Now a persimmon Yokan is familiarly in Ogaki as a confectionary but it was an innovative idea to make Yokan with fruit at that time.

It was 1838 that persimmon Yokan was born. It seems that the raw material “Dojyo hachiya persimmon” was a luxury good enough to be delivered to the court instead of a yearly wage of the same value as the one worth of rice. The manufacturing method still remains in the old way. They peel colored big persimmon carefully one by one, and make it a sun-dried persimmon. By raising persimmon, sweetness increases and it becomes a smooth texture with less fiber.

 

Bamboo containers are used from the fifth generation. From the fifth generation’s best friend, Issue Tsuboi who was a bamboo researcher said, “Because bamboo and persimmon are compatible, if brought up nearby, bamboo grows and persimmon grows sweeter” so they used bamboo containers and specialized for persimmon Yokan.

Tsuchiya originally created a Japanese confectionery with complete order-receiving system to pay for Ogaki castle owner and Toda clan. However, in the early Meiji era, clan clanging prefectures were held, and the Toda clan, who was the first customer, leaves Ogaki. After that, Ogaki is one of the leading producers of spinning industry in Japan by attracting companies. Workers gathered collectively from the whole country to spinning factories

From this time, it seems that they came to make sweets such as ‘Ogaki’, which is pleased when an engineer returns home.

 

Currently we are actively involved in the development of new products that are not limited by the framework of the Japanese and Western.

Among various items, in recent years, the sweet called “Mizu no Iro” has become nationwide topic.

It was invented as a Japanese sweet unique to Ogaki, a city of water. At first glance it does’t looks like a Japanese sweet because it has a vivid color, but as a manufacturing method, it is made of ager so it is really Japanese sweet.

n order to express ambiguity of water, one by one craftsman carefully makes by hand. Therefore, the production volume is limited, the order is reservation system.

In the shop front, sweets that feel the season and Ogaki are abundant in variety.
